Beyond the Filet: New Report Shows How Fish Waste Can Generate New Products and Value Streams

On the heels of United Nations-observed World Fisheries Day, the Centre for Building Sustainable Value at Western University’s Ivey Business School releasing a report prepared for the Great Lakes and St. Lawrence Governors and Premiers analyzing Ontario fish supply chains and operations. The report, released on November 26, 2024, explores the hidden value of underutilized byproducts from local Walleye and Yellow Perch catch, providing recommendations on how the industry can curb raw materials waste and create additional value by using more of each fish in the net.
